As our Chopper Sous Chef, you will advance your culinary career in a dynamic environment and support the culinary team in preparing exceptional dishes. This is a 48 hour, full-time position.


We are aiming to open our doors at the beginning of December, however, the date might potentially move by a week or two due to the nature of new openings so we would kindly ask you to be open and flexible with the start dates. We are expecting this role to start on the week beginning with 3rd November 2025.

Dim Sum Library serves up modern Cantonese atmosphere in the heart of London in The Yards. We’ve got next-level dim sum, tea-inspired cocktails, and all-day dining. And we’re just a short two-minute walk from Covent Garden or Leicester Square station. Easy to get to, hard to leave.

Your day at Aqua:

  • Culinary Leadership and Crafting Recipes for Success: Assist the Head Chef in overseeing kitchen operations, ensuring that dishes are prepared to the highest standards of quality and presentation. Contribute to menu planning and recipe development, bringing creativity and innovation to our culinary offerings
  • Team Collaboration & Mentorship: Supervise and train all team members, fostering a positive and collaborative environment that encourages skill development and teamwork


You will be paid £30,534.76 per year. In addition, you can be a part of the venue’s Tronc system, which may give you between £19,465.23 and £24,465.23 extra per year. The Tronc system is managed by the Tronc Master.
